Vanity top finish
Finishing a bare Tassie oak vanity top.
Can I start layering a gloss finish before cutting holes for the basin/tap ?
What is needed for the underside?

Cut the holes first, especially if you're using a film finish (like polyurethane). Otherwise you'll damage it when cutting holes and won't be able to fix it. And it might start peeling.
Not sure what you mean by underside, but finish it the same way as the top side...

holes first - not only for what igalic said, but you can also get some finish on the inside of the cut holes for further waterproofing. Underside, I would do the same, but obviously you don't need to be as delicate as just for waterproofing

Yeah was thinking just some wipe on poly for the underside and using intergrain gloss for the top.
