Fish smoker
I have an old fridge which i may try to turn into a smoker.

I've not ever caught enough fish in one hit to need something that big
My concerns would be the plastic in the fridge might not be suitable for the hot smoke. (chemicals).
I have turned fridges into eskys.
Would you be better off making one from scratch using the insulated panels??? You could then custom make it to suit the size you need and racks etc.

Find a junker 2-burner gas BBQ with valves which turn smoothly.
Cut away 1/2 the rock rack to be able to set a small cast iron frypan right on that burner.
The fish gets brined(+/-) and laid out on the other side.
Light only the side with the pan of well soaked apple wood pieces.
All of mine run 275F when set at minimum. The implication is that
gasser BBQ #17 is just outside my door. #16 is a s/s Jackson for quick things, on the balcony.
#15 was once a monster 4-burner job that I gutted and now drive with the burner
from my lobster pot. I do ribs, butts, chickens, corn, potatoes that way.
Since you are probably after a fairly cold smoke, a gasser BBQ might not be physically large enough.
An old fridge might be OK but as Lyle says, heating the plastic might be a poor thing.
Although the plastic was fine for cold foods.
My brother uses a large metal garbage can with a hole in the bottom for the heater & smokewood pan.
Fish on old oven racks, he can do 40 lbs easy.
