I would prefer the 20th as the Batch 02 Blades should in all likely hood be ready by then.

While time is a limiting factor, mortising and cleaning a hand plane is possible. However I doubt many people will have enough mortising skill to make it in time. However the bulk of the work could be easy done and people could finish and clean up their planes at home.

I think maybe box making would be a good project. We can clean up the boards with hand planes cut the dovetails or finger joints with hand saws and chisels. Cut the rebate for the sole and a sliding lid all in a single day. If we have enough people joining in we could even have two or three groups each making their own box. A little healthy competition.
