I've tried to do some super-gloss finishes in the past. You can get epoxy finishes that are one-pour affairs (with names like "Liquid glass") - you just mix the 2 parts, pour it on, and let it dry. They'll make a high-build glassy finish in one go.
Other finishes can be made glassy smooth, but they often require spraying on, then cutting back, sanding flat, and polishing, which adds up to a lot of work, although they can give a beautiful finish.
Either way, if there are voids in the wood, you should fill them first. You can do this with epoxy for a clear finish. Some finishes will also benefit from grain-filling, although I tend to just keep putting coats of my chosen finish until the grain fills. If you do use different finishes, make sure they are compatible.Good things come to those who wait, and sail right past those who don't reach out and grab them.
