So I went out to Doors Plus and browsed through their "packing" doors in the carpark and picked this up, scored it for free too! Not sure what it is … two boards of MDF sandwiching a solid frame, no idea what's in the middle but it's heavy, solid and perfect for my purposes; better than a full-width exterior door.

Good Morning Nathanael
Nicely done, good price - looks like half of a bi-fold door. Should work well.
Just regard that door as expendable. I just screw guides, stops, bench dogs?, etc directly to the bench with self tapping screws. Works well. Also draw directly onto the bench - guidlines, assembly instructions, etc. When pencil gets too confusing, paint over it. When top gets too daggy, turn it over - I usually select good or daggy side depending on job. When both sides are too daggy, get a new door.
Also, if it slides on the sawhorses, then either:
- screw cleat to bottom of door and clamp to sawhorse, or
- screw two cleats on either side of a sawhorse.

We had big, solid core doors at work, all pushing 200kg each. Something to do with retarding rates of fire spread.
Solid wood edges, door-skin ply surfaces and filled with cement/mortar. What a bench they would make.
