Not knowing how big the file is because the computer itself doesn't know, until you actually tell it to save the image.
JPG compression used in photos is what is called 'lossy' compression - in order to achieve small file sizes, information has to be permanently and irrecoverably removed from the picture.
Since every picture compresses differently, it's not really possible to predict the file size ahead of time - the only way to do it is to run the compression algorithm...which takes just the same amount of time as some sort of 'previewing' option.
If your 'preview' option was aiming for a target size, you'd need to run a whole stack of possible sizes to gradually narrow down to the desired size, which is computationally intensive and would make for a slow preview option.
The technique that I've found works well enough for me is to resize pictures so that the longest side of the pic is between 10 - 15cm, at a resolution of 96dpi. This will generally give a pic somewhere between 30-100k.

I've used the text colour trick on some older posts, but wasn't sure (and still not sure) how they behaved when quoted. Archived material seems to be plain black on white.
With so many optional skins, hidden text probably isn't always hidden.
