Default Dark Stain For Cutting Board

I'm proposing to put together a cutting board using Tassie Oak strips 30mmX12mm. Altogher I'll be using 27 strips and wanted them alternating dark and light and in a random pattern.

Is there any stain I can use to darken the timber (even verging on black would be fine) that would be safe to use with foodstuffs and stand up to hot water cleaning without losing too much colour over time?

If you have a copy of Niel's book there's a recipe for tea stain in it. Also from memory I think the water dies he sells are non toxic.
