Aha...the Asian world...
A Scopas is a rare marine fish, so therefore Scopas chops are obviously a particular method of cutting the flesh to produce sashimi. I imagine that the result would be something like this

Its from the old sailing ship days when all the sailors knew the earth was flat.
They had this huge verge board along the edge of the world so ships couldnt fall off!
