Re-finishing timber edge of kitchen bench

G'day all,

Long time reader, first time poster.

Recently bought a house and am having fun fixing up a few small things that have been bugging me, one of which is the edge of the kitchen bench. Basically it's a laminate bench top that has a timber edge. The finish on the timber is all but gone, especially around the sink and stove areas. I'm keen to sand it back and re-finish it. Can anyone suggest a suitable finish (and/or technique) that I can use that is safe for food preparation areas.

I've had great results with 'briwax' danish oil - which is really a wipe-on varnish, with a high oil content:
Sand back to timber
Apply a coat with a rag, being liberal
wipe off remnant oil after about 10 mins
Let harden for 24 hrs
Repeat min. 3 times - I did about 5 coats.

I'm a big fan of Danish Oil having previously used it to finish a second-hand sideboard - came up a treat. How does it go in areas that may get wet or damp? (around sink, wiping down with a wet sponge, etc). And how's the food safety aspect?
