Could a basic product like this work

- 100% silicone sealant

- *Clean up spills immediately-sealant will resist penetration by common stains for up to 10 minutes.
Or does it need to be more specialist Joint Specific like

It was previously sealed wo any cracks for about 7 years post being put in but in fixing my ductin, see another thread I had to break the seal and dig the silicone out.

Don’t think it specifically calls out stainless but metal yes:
- Superior adhesion to a broad range of surfaces, resulting in a lasting finish.
- Suitable for sealing gaps where movement occurs such as: between window and door frames and the wall, along skirting boards, around cornices, in corners or between walls & ceilings, between cabinets and cupboards, around air conditioning vents and the ceiling.

I think No More Gaps would be ok. It allows you to build it up to fill larger gaps like those. Or the second one above as it's paintable like NMG.
I'd mask the stainless to get a nice sharp line
