Keep them covered with water and they will last for up to maybe a week in the refrigerator. It helps if you change the water every two days or so.

A friend sent me up some of his home grown eggs (smaller at 40-50g, and duck egg blue) that come from his South American hens. Can never remember the name but it ends in ....cana (Chookcana?).

I have found taking the eggs from boiling water and get them cold as soon as possible makes peeling them very easy. I just put the pot with eggs under the tap and run cold water over the whole lot for a few minutes.
