Chicken & Leeks
Chicken breast with leek.
As mentioned in Picture Gallery , (My Nightstand item)
The recipe for above was adapted from an inflight magazine article on a long haul flight. A fellow passenger swapped magazines as sometimes happens on these flights and I took a fancy to this article.
To serve two persons.
Chicken breasts,
4 leeks,
2 ozs.butter
2 ozs.oil.
Extras, as required, Potatoes, mushrooms, etc. herb if wanted rosemary and seasoning.
Chop leeks into 4" pieces and place in pan with 1 oz. butter & 1 oz. oil. Saute for 5 minutes until slightly browned, then place in a baking dish and place in 200 c oven for 10 minutes to soften.
In the meantime put another 1 oz. each of butter & oil in pan and saute chicken breasts for 10 minutes (seasoned)
Take the leeks out of the oven and place the chicken breasts on top and return to the oven at 180c for around 30 minutes. Place mushrooms in a tinfoil parcel with seasoning after above have been in for 15 minutes and bake on a separate shelf for the balance of time (15 mins.)
Prepare potatoes and bake in microwave. Or potatoes as you wish.
Add a red item to the plate for colour (I use fresh tomatoes)

It's alright for you wealthy Poms on your 747's but I've only got a Cessna, bit hard to do
