Default Please help with adding an elbow bend to my dishwasher plumbing.

My dishwasher came with an Aquastop.
    Helps to prevent leaks.

The writeup mentions it needs to be installed vertically.
An not horizontally the way they left it.

Any chance I can sort this out myself?

    Also while I'm there.
Can I change over this cutoff valve to a cutoff lever?
    If it makes any difference,
Out mains water supply pressure is very high.

    Thanks in advance.

Very open ended question, legally no plumbing needs to be completed by a licensed plumber.

Technically any watermarked shutoff can be used, lever or any other type. Orientating the thread for the outlet can be achieved by combination of fittings or bending copper pipe, the water under pressure in the pipe will not care which direction it is pointed to.

No disrespect intended but if you are not confident in what will and will not work it may be better to engage a licensed professional to have the work performed.

Edit: To simplify the install just get the tee rotated 90 degree, remove the second lower tee and put the stopcock direct off the first tee. Then your dishwasher stop will be horizontal and you can rotate the 90 elbow to point down.
