Flooring for new house

We have decided to install the floor ourselves to save money. The timber is Jarrah pre-finished. I’ve read up the info from timber.org website but I think it’s for people who know a bit of flooring. Please have a look at the questions below and help me out:
The timber place sold me anchors to fix plywood (15 mm) to concrete. Do I need to drill holes before fixing anchors to the floor?
What’s the brick pattern when laying plywood? Does it mean the plywood pieces need to be staggered?
They sold me some plastic sheet instead of the polyethylene sheet as suggested from timber.org. Would this be okay?
