Finishing Tallow shelves

Hi All,
Please could you wise peoples send me all your advise on finishing Tallowood shelves, two units approx 2.5m x 1.8m. Being new to the game would like to start on the right track.
Im wanting to obtain a satin like finish - not gloss to match the sideboard they'll be mounted on top of.
