Seeking advice on piers in sydney

Hi all, I am planning to build a timber frame house on brick piers in the Mittagong area of outer sydney. Its on flat ground. Wood joists and bearers will be used. Specifically, when pouring a footing in each hole for the piers to sit on, whats the best way to get the surface of the footings level with each other in each hole? Thanks
