Structural significance of laths from lath & plaster

The plasterer has said we need to remove all the laths from our walls because we won't get a straight finish if he slaps the plasterboard over the top of them. He has a point because it is pretty wonky.

As I've been nosing about (including on this site) I've noticed that there are differing views on whether or not these bits of wood contribute to the stability of the structure.

I guess it's probably a case of 'get someone to have a look at it as every place is different', but in general was it ever standard practice to depend on them?

I'd love to leave them up, but not at the expense of straight walls particularly in the hall which is 9m long.
