Internal WRC coating

I'm looking for a nice finish to redo the western red cedar doors and windows in the kitchen family / room. The current finish looks like satin poly, but its rough and a bit worn. Not that worn that I would consider strippng back to bare timber.

I am looking for a non plastic finish. ANy hints on what looks warm but not too glossy?
