Three ladies go to a hotel.
The hotel manager says a room will be $30, so each of the ladies hands over $10.
Ten minutes later the hotel manager realises the room rate was only $25, so he asks the bus boy to take $5 to the ladies hotel room.

One the way the bus boy decides that he will take $2 out of the five dollars for his efforts and gives each of the ladies $1 each.

Effectively, each lady has paid $9 for the room and the Bus Boy has pocketed $2:

3 x 9 = $27
27+ 2 = $29

Where is the other dollar ?

Nothing, you've just got a plus sign mixed up with a minus sign. Your calculations should read:

3 x 9 = $27
27 - 2 = $25
giving the new cost of the room. To get back to the original $30,

27 + (2 + 3) = $30

Looking back at this, my explanation is about as clear as mud, but think about it and you'll get it.

Yep, clear as mud. I'ts a great one, if you can master the oh so simple maths, to use on your mates at the pub after a couple of pints.
