Basic question..
If I pull up some tiles stuck to concrete, what sort of gunk under the tiles will I be faced with and how hard is this to get off so I can retile over the top with new tiles? Do you have to grind the surface clean? Does the gunk scrape off easy?

Not in the least bit expert about tiles, but as I understand it tiles can and have been laid either using a cement screed, or in latter years a rubber modified cement based tile adhesive. There are probably other types too.
The cement screed would less difficult to remove, use something like a brick bolster & club hammer I'd reckon. The rubber modified ones are by their nature more flexible but would hang on better, so not sure whether the same technique would work or whether you would grind it off with specialised gear.
Not much but hope it helps. Maybe do a search here or on google for tile removal or tile adhesive removal or somesuch.
Another tack could be tiling over the top of the old ones, I would get proper advice if you went this way but I think it can be done provided that the old ones are very well stuck, no cracks, whatever is under them is stable, etc.
