There would be so many ways to finish a beautiful piece of timber.
Here are some expamples Handcrafted Woodwork - Livos Australia (http://www.livos.com.au/handcrafted_woodwork)
It would be a good idea to test out some timbers and products on sample pieces first to figure out what one can achieve and how.
I must say I am partial to the penetrating oils. Because they contain waxes, one can manipulate the sheen level somewhat. If it will be a surface that will come in contact with food, the Kunos is also certified food safe.

You scored a nice piece there! :)

As for a choice of finish, what do you intend to turn it into? That will narrow down the list of suitable choices.

I've long been a fan of Tung Oil, but that tends to take a looooong time to apply sufficient coats; so instead I'd probably go for a blond Shellac. Whatever you do, please, please don't choose a Poly U!

And pix of the finished piece, please.
