Hello, can anyone please advise on a good hard wearing finish for a Huon Pine tray that most importantly will retain its natural colour? I would also like it to be hard wearing, waterproof, and reasonably heat proof from cups of coffee etc. if possible
I have found that linseed oil based finishes turn it a yellowy - orange colour

I use Ubeaut white shellac as a sanding sealer (instead of ordinary shellac), then Kunos oil. I'm not sure how water & heat resistant it is, but they make a countertop oil (http://www.livos.com.au/shop/page/shop/flypage/product_id/48/a/category/e/products_furniture) which is. I haven't used it, but I think it gives a lower gloss sheen.
Huon pine seems to darken over time to a golden colour, but I haven't seen any major problem with Kunos oil.

Have a look at livos countertop oil - http://www.livos.com.au/shop/page/shop/flypage/product_id/48/a/category/e/products_furniture

Hard Shellac (http://www.ubeaut.com.au/hardshell.htm) should do the job. Make sure to wash the huon down with Metho before applying any finish. This will take away the surface oil allowing for most finishes to adhere better.
Unfortunately there is nothing that is going to stop the huon from aging to a deep honey colour, but initially the Hard Shellac (http://www.ubeaut.com.au/hardshell.htm) won't darken the timber any more than wetting it down with water (or metho).
Hope this is of some help.
