I'm in the process of resurfacing a jarrah burl coffee table for a friend. It was prevoiusly coated with a thick layer of high gloss, probably Envirotech or something similar. After spending the morning sanding off the gloss I'm at this stage:
Currently sanded to #60 grit.

Apart from a couple of deep pockets, most of the gloss finish has been removed. I can't think of what to do about this except to put the burl through a thicknesser, and I don't want to do that .

I'm planning on sanding to #400 grit and finishing with Hard Shellac (http://www.ubeaut.com.au/hardshell.htm) and Trad. Wax (http://www.ubeaut.com.au/trad.html)
