Actually, catgut, a surgical suture, is derived from the small intestinal serosa of Beef Cattle :( . Mainly sourced from the mid-west USA and imported to Australia for processing into the suture material.
Sheep were only used for a very short period in the early times  , I cant find any reference to equine usage.

Regards

The canary islands one is an interesting question because it actually works in reverse.

You're right that the canary islands are named after dogs (canine), but the name for the canary bird comes from the canary islands.

.... and the "Cat" in catgut is short for "Cattle", it used to be used in fishing lines, tennis racquets, musical instruments and all sorts of things.

My Uncle had a catgut line when I was very small, but I still remember him soaking it before going fishing to get it pliable, and stretching it after the event.... glad they invented nylon!
